Mac N’ Cheese~One Pot Stove Top Method

I have for you a scratch mac n’ cheese recipe that is somewhat a miracle. And I promise it’s easy! It can be made with whatever kind of cheese you want, however much. And it turns out creamy, cheesy and not over cooked.

The traditional way to make mac n’ cheese is to begin with a roux. Butter is melted in the pan and flour gets added. This creates the thickening agent for the sauce. Milk is added, sometimes cream, and then it cooks into a bubbly rich white sauce. Then cheese gets stirred in…and we haven’t even mentioned yet that the macaroni has to get par cooked in a separate pot!

I am done with this method. I’ve got pictures to paint! With this process there is no cooking of the macaroni ahead of time, you don’t even bother with a roux and it’s all done in one pot. Instructions
  1. In a medium saucepan combine milk, water, macaroni and salt. Cover and cook on medium heat, stirring frequently so macaroni does not stick to bottom.
  2. Once mixture comes to a boil, lower to a simmer and cook, covered, for 3-4 minutes or until the macaroni is about half cooked. (It is better to under cook.)
  3. Stir in cheese and mix until fully melted and well combined. Cover pot and allow to stand 5-7 minutes or until macaroni is fully cooked and sauce has thickened.
