Looking for a quick and easy way to use up that bag of spinach in your fridge that you don’t know what to do with? Then you have to try these super tasty Spinach Squares! Not only are they so simple to make that even the most inexperienced cook can whip them up in minutes, but they can literally be enjoyed for breakfast, lunch, dinner or even a snack!

I discovered this recipe many years ago when my sister had to contribute a recipe for a community cookbook one of her friends was writing. When she gave me a copy of the book, I was smitten by how effortless most of the recipes were–including this recipe for Spinach Squares. It only uses 5 ingredients (plus salt and pepper!) and they’re ingredients that nearly everyone always has in their kitchen: flour, milk, cheddar cheese, eggs and of course, spinach!

What is a Spinach Square?

A Spinach Square is quite literally a reflection of its namesake: a compact little square of savory goodness that is tasty, filling and versatile enough to please even the pickiest of palates. Not only are these nourishing bites loaded with healthy, antioxidant rich spinach, but each mouthful is bursting with the sharp zest of cheddar cheese. The texture is similar to quiche, minus the fussy crust involved in the making. If anything, the texture might be a little more firm than quiche; they slice into the neatest little squares. This makes them perfect for gatherings. And they are so tidy you can practically serve them as a finger food.

How Do You Make Spinach Squares?

The process of making spinach squares couldn’t be easier. Simply beat some eggs, then add the remaining ingredients in the order given. Pour the mixture into a prepared pan and about 30 minutes later your spinach squares are served!

How Do I Serve Spinach Squares?

You can serve Spinach Squares literally any time of day and in any shape or form–that’s what makes them so perfect to make anytime! You can enjoy them hot or cold, with a fork as a main dish or a side, and you can even serve them as a finger food for a picnic or cocktail party. They are especially great for a nutrient packed breakfast, but you will likely want to enjoy them any time of the day!

How Can I Modify the Recipe?

Just like my Quick Cheese Bread recipe, you can spruce up these Spinach Squares for a little variety, so feel free to add any ingredient under the sun that can make them your own unique brand. I have added mushrooms to the mix, different cheeses other than cheddar, and other herbs and spices can also add a twist to make them your very own. Try throwing in a little chopped onion, garlic, dill or even a dash of nutmeg.

Despite having tried other variations over the years, I can honestly say that the original mix of just spinach, egg and cheese seems to be the most enjoyable for myself. Sometimes simple is the way to go, and some things can’t be improved. I think at the end of the day, Spinach Squares fall into that category!

Spinach Squares

Kind of like quiche but not as fussy, Spinach Squares are simple to make with only 5 main ingredients. They're so satisfying and versatile, you will make them for breakfast, lunch, dinner and even a snack!

Ingredients
  

  • 1 package fresh spinach 284 grams
  • 4 eggs
  • 1 cup milk
  • 1 cup all purpose flour
  • 2 cups sharp cheddar cheese, grated
  • ½ teaspoon salt more or less to taste
  • ¼ teaspoon black pepper

Instructions
 

  • Preheat oven to 350℉/177℃. Grease an 8 x 8 inch pan and line with parchment paper. Set aside.
  • Wash and dry spinach. If you are using regular spinach, remove any tough stalks (baby spinach usually does not have stalks). Chiffonade the spinach by piling small handfuls of the leaves and chopping them very finely. They should be fluffy and airy and not in very large chunks. Set aside.
  • In a large bowl, beat eggs well. Add milk and flour. Mix well and then add cheese and spinach. Season to taste with the salt and pepper and mix very well to combine.
  • Spread mixture into the prepared pan and pack down well. Smooth the top well so there are not a lot of little spinach leaves peaking above the surface. Bake for 30-35 minutes or until the middle feels just set when lightly pressed. It should still feel slightly jiggly, but not too hard.
  • Cool spinach squares for 10 minutes in pan before slicing into 9 (or desired amount of) squares. Serve warm or cold.
