Can I Use Hot Chocolate Mix Instead of Cocoa Powder?

No, you cannot substitute hot chocolate mix for the cocoa powder in these brownies. Hot chocolate mix is entirely different as it has milk powder, sugar and other ingredients. Using this in place of cocoa powder would result in brownies that are way too sweet and likely cakey rather than fudgy. So for that reason, make sure to use nothing but genuine unsweetened cocoa powder. You will find it in the baking aisle of the grocery store–not the beverage aisle!

Why is There no Baking Powder in These Brownies?

Many brownie recipes call for baking powder to add a little leavening while baking, but these brownies don’t call for it. Adding baking powder would make them turn out more cakey than fudgy, so we leave them out here. The eggs already help with some leavening, so no need for additional ones.
