What the heck are confetti squares, anyway? If you grew up in Canada, you probably already know because they are classically Canadian. In case you don’t know, these are no bake squares made from butterscotch chips melted with peanut butter. Into this you stir a healthy dose of coloured marshmallows, then press it into a pan. They are incredibly sweet yet irresistible. They made an appearance at every bake sale I ever went to as a child so I have probably eaten hundreds of them!

What Ingredients go in Confetti Squares?

You only need 6 ingredients to make confetti squares. They are:

  • Butterscotch chips
  • Butter
  • Peanut Butter
  • Salt
  • Vanilla
  • Coloured mini marshmallows

Can I Make Confetti Squares with Chocolate Chips?

You definitely can! Though that type of square has a different name: Church Window Squares. These equally tasty sweet treats are basically a chocolate version of this only you roll the mixture into a log. Many bakers often roll the log into flaked coconut. But anything goes with baking, so make them however you like!

How Do I Store Confetti Squares?

The best way to store these is in an airtight container and in the fridge. They will keep this way for 1-2 weeks. Leaving them at room temperature is okay, but they may soften a bit too much especially on warmer days.

Confetti Squares

Confetti squares are a no bake treat that only uses 6 ingredients. Colourful fruity marshmallows encased in a peanut butter and butterscotch square. Perfect for a cookie tray or exchange.

Equipment

  • 1 Saucepan
  • 1 8 inch square pan
  • Spatula
  • Parchment Paper

Ingredients
  

  • ¼ cup butter
  • 2 cups butterscotch chips
  • 1 cup peanut butter
  • ¼ teaspoon salt
  • 1 teaspoon vanilla
  • 4-5 cups Mini coloured marshmallows 250g

Instructions
 

  • Grease an 8 inch square baking pan and line with parchment paper both on the bottom and up the sides.
  • In a saucepan over low heat, melt butter. Add butterscotch chips, peanut butter and salt. Stir constantly and heat until the butterscotch chips are completely melted and the mixture is smooth. Remove from heat.
  • Stir in vanilla. Allow the mixture to cool completely for 15-20 minutes.
  • Stir in marshmallows until they are completely coated. Spread the mixture evenly in the prepared pan. Refrigerate 1-2 hours or until firm. Cut into squares and serve or keep refrigerated for up to 2 weeks.

Notes

Confetti squares will keep in an airtight container in the refrigerator for up to 2 weeks.
You can freeze confetti squares for up to 3 months.
