Confetti squares are a no bake treat that only uses 6 ingredients. Colourful fruity marshmallows encased in a peanut butter and butterscotch square. Perfect for a cookie tray or exchange.

- ¼ cup butter
- 2 cups butterscotch chips
- 1 cup peanut butter
- ¼ teaspoon salt
- 1 teaspoon vanilla
- 4-5 cups Mini coloured marshmallows 250g
Grease an 8 inch square baking pan and line with parchment paper both on the bottom and up the sides.
In a saucepan over low heat, melt butter. Add butterscotch chips, peanut butter and salt. Stir constantly and heat until the butterscotch chips are completely melted and the mixture is smooth. Remove from heat.
Stir in vanilla. Allow the mixture to cool completely for 15-20 minutes.
Stir in marshmallows until they are completely coated. Spread the mixture evenly in the prepared pan. Refrigerate 1-2 hours or until firm. Cut into squares and serve or keep refrigerated for up to 2 weeks.
Confetti squares will keep in an airtight container in the refrigerator for up to 2 weeks.
You can freeze confetti squares for up to 3 months.
