Extra Creamy Vanilla Frosting – Vanilla Buttercream
Are you looking for a vanilla frosting recipe that turns out extra creamy? Well this one not only delivers that, but it also turns out surprisingly light and fluffy.
I say surprisingly because this is a buttercream frosting. While these can be very creamy, it’s not often that they are light and fluffy.
Great For Decorating
I’ve been making this extra creamy vanilla frosting since way back in my early 20s when I use to bake custom cakes for clients. That said, it’s super easy to work with and makes lots of fluffy swirls.
As for the texture and flavor, it’s creamy beyond delight. And unlike many commercial frostings that come in a plastic tub, you won’t get blasted with a mouthful of artificial flavor. And compared to many vanilla buttercream frostings, this one has considerably less sugar.
Margarine?
Even though most buttercream frostings call for only butter as far as fat goes, I like to cut mine with 1/3 of the amount of margarine. This is not to save money or because I am being cheap; I believe it helps make my frosting a little fluffier.
Boiling Water?
What else makes this vanilla frosting so airy and fluffy? The boiling water, but only one teaspoon. Any more and your frosting might split. You might find it hard to believe, but when I don’t add it my frosting seems too rich and heavy. For best results add it while beating on high speed. And it must be boiling water; hot water doesn’t work the same.
How Long Does It Keep?
This extra creamy vanilla frosting keeps refrigerated in an airtight container for up to one week. It freezes beautifully the same way for up to three months.

- 152 Grams Salted butter, soft 2/3 cup
- 76 Grams Margarine, soft 1/3 cup
- 405 Grams Confectioner’s sugar 3 cups
- 1 Teaspoon Boiling water
- 1 1/2 Teaspoons Vanilla extract
- 1/4 Teaspoon almond extract
- 1/4 Teaspoon salt If using unsalted butter
