Amazing One Bowl Sweet Potato Muffins

These one bowl sweet potato muffins are truly amazing! They’re so easy to make even a very inexperienced baker will make them great. Plus they are so quick to whip up, you can have them ready in about 30 minutes.

These muffins are hearty and bursting with the warm flavors of cinnamon, nutmeg and cloves. They make a perfect breakfast and for added nutrition, just swap out half of the all purpose flour for whole wheat flour. Plus I love the fact that they are made in one bowl, just like my Best Bran Muffins!

And for the modest 1/4 cup of oil this muffin recipe calls for, they turn out so moist and tender. This is thanks to the mashed sweet potato that makes these muffins permeate with more moisture and flavor each day. And the great thing is you can use up leftover sweet potato!

Amazing One Bowl Sweet Potato Muffins

Ingredients
  

  • 2 eggs
  • ½ cup brown sugar
  • ¼ cup vegetable oil or canola oil
  • cups mashed sweet potato
  • ¼ cup sour cream
  • 1 teaspoon vanilla
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • teaspoon cloves

Instructions
 

  • Preheat oven to 400°F/200°C. Line a 12 cup muffin pan with paper cups or grease and flour.
  • In a large bowl whisk together the eggs with the brown sugar until smooth. Add vegetable oil, mashed sweet potato, sour cream and vanilla. Whisk until the mixture is very smooth.
  • Add the flour, baking powder, baking soda, salt, cinnamon, nutmeg and cloves on top of the sweet potato mixture. Begin mixing the dry ingredients together with a spatula without mixing it into the wet ingredients below. Once the dry ingredients are mostly mixed, begin incorporating everything together. Do not over mix. Once you stop seeing traces of flour, stop mixing. The batter will be quite thick and stiff.
  • Divide batter evenly among prepared muffin cups and bake for 18-22 minutes or until a toothpick inserted into one of the muffins comes out clean. Cool in pan for 5 minutes before removing. Serve warm.
