Honey Pickled Beets ~ Quick Refrigerator Recipe

A quick refrigerator pickle that doesn’t require any canning.

Ingredients
  

  • 350 Grams beets about 3 medium, cooked and peeled
  • ½ Cup water
  • ½ Cup white vinegar
  • ½ Teaspoon salt
  • 4 cloves
  • 6 black peppercorns
  • 1 Inch cinnamon stick
  • ¼ red onion sliced
  • 1 Tablespoon honey

Instructions
 

  • Slice or dice beets into chunks and pack into a 500 ml mason jar. Set aside.
  • For the brine, combine water, vinegar, salt, cloves, peppercorns and cinnamon stick in a small saucepan. Bring to a boil over medium high heat, then reduce to a simmer and cook for 5 minutes.
  • Remove brine from heat and add sliced red onions and honey. Stir well. Pour over beets and push the onions into the jar so everything is comepletly submerged. There should be just enough liquid, but if you are short then top off with warm water. Allow beets to cool completely before covering with a lid and refrigerating. Allow flavors to develop for 4 days before enjoying.
