Spinach Squares

Kind of like quiche but not as fussy, Spinach Squares are simple to make with only 5 main ingredients. They're so satisfying and versatile, you will make them for breakfast, lunch, dinner and even a snack!

Ingredients
  

  • 1 package fresh spinach 284 grams
  • 4 eggs
  • 1 cup milk
  • 1 cup all purpose flour
  • 2 cups sharp cheddar cheese, grated
  • ½ teaspoon salt more or less to taste
  • ¼ teaspoon black pepper

Instructions
 

  • Preheat oven to 350℉/177℃. Grease an 8 x 8 inch pan and line with parchment paper. Set aside.
  • Wash and dry spinach. If you are using regular spinach, remove any tough stalks (baby spinach usually does not have stalks). Chiffonade the spinach by piling small handfuls of the leaves and chopping them very finely. They should be fluffy and airy and not in very large chunks. Set aside.
  • In a large bowl, beat eggs well. Add milk and flour. Mix well and then add cheese and spinach. Season to taste with the salt and pepper and mix very well to combine.
  • Spread mixture into the prepared pan and pack down well. Smooth the top well so there are not a lot of little spinach leaves peaking above the surface. Bake for 30-35 minutes or until the middle feels just set when lightly pressed. It should still feel slightly jiggly, but not too hard.
  • Cool spinach squares for 10 minutes in pan before slicing into 9 (or desired amount of) squares. Serve warm or cold.
